Heartburn-friendly vegetarian recipe.

Ingredients:
- 1 tsp olive oil
- 2 cups sliced mushrooms
- 2 cups sliced zucchini
- 2 cups sliced yellow crooked-neck squash
- 1 cup fresh green beans, cut into 1" lengths
- 1 cup sliced carrots
- 1 cup broccoli florets, cut in half
- 1/4 cup water
- 1 cup low-fat sour cream
- 1 tsp Italian herb seasonings without pepper
- 8 oz rigatoni pasta, cooked according to directions without salt or fat
- 1/2 cup sliced black olives
- 1/4 cup Parmesan cheese
- 1/2 cup feta cheese
Preparation:
- In a large skillet placed over medium-high heat, add olive oil and mushrooms
- Cook for 2 to 3 minutes
- Add zucchini, yellow squash, green beans, carrots, broccoli florets, and water
- Cover and cook vegetables 3 to 5 minutes or until just tender
- Stir in low-fat sour cream and Italian seasonings
- Toss together hot cooked rigatoni pasta with vegetable mixture, olives, and Parmesan cheese in a large bowl
- Top with crumbled feta cheese
