Cheese Topped Vegetable with Rigatoni

Ingredients:
  • 1 tsp olive oil
  • 2 cups sliced mushrooms
  • 2 cups sliced zucchini
  • 2 cups sliced yellow crooked-neck squash
  • 1 cup fresh green beans, cut into 1" lengths
  • 1 cup sliced carrots
  • 1 cup broccoli florets, cut in half
  • 1/4 cup water
  • 1 cup low-fat sour cream
  • 1 tsp Italian herb seasonings without pepper
  • 8 oz rigatoni pasta, cooked according to directions without salt or fat
  • 1/2 cup sliced black olives
  • 1/4 cup Parmesan cheese
  • 1/2 cup feta cheese
Preparation:
  • In a large skillet placed over medium-high heat, add olive oil and mushrooms
  • Cook for 2 to 3 minutes
  • Add zucchini, yellow squash, green beans, carrots, broccoli florets, and water
  • Cover and cook vegetables 3 to 5 minutes or until just tender
  • Stir in low-fat sour cream and Italian seasonings
  • Toss together hot cooked rigatoni pasta with vegetable mixture, olives, and Parmesan cheese in a large bowl
  • Top with crumbled feta cheese
Makes 4 servings.
