Baked Broccoli and Rice Casserole

Heartburn-friendly vegetarian recipe.

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

  • 3 cups chopped broccoli
  • Nonstick vegetable cooking spray
  • 1 tsp olive oil
  • 1/2 cup chopped celery
  • 2 (10 3/4 oz) cans low-fat cream of celery condensed soup
  • 1/2 cup sliced water chestnuts
  • 4 tbsp Parmesan cheese
  • 1/2 cup (2 oz) shredded cheddar cheese, divided
  • 1 cup long-grain white rice
  • 8 saltine crackers

Preparation:

  • Preheat oven to 350 degrees
  • Cook broccoli until barely tender and then drain
  • Set broccoli aside
  • Cook rice according to directions, without salt or fat
  • Set rice aside
  • Cooking over a medium-high heat, in a large skillet sprayed with nonstick vegetable cooking spray, combine olive oil and celery
  • Saute 2 to 3 minutes and then remove from heat. Set aside
  • Mix together in a large bowl the cooked broccoli with celery soup, sliced water chestnuts, Parmesan cheese, and 1/4 cup shredded cheddar cheese
  • Add cooked rice and mix well
  • Add broccoli-rice mixture to a casserole dish sprayed with vegetable spray
  • Top with remaining 1/4 cup shredded cheese and crushed saltine crackers
  • Bake for 30 to 35 minutes
