Ingredients:
- 2 medium russet potatoes
- 1tbsp low-fat margarine
- 2 tbsp fat-free or low-fat sour cream
- 2 tbsp skim milk
- 1 tbsp fresh parsley, finely chopped
- 4 tbsp grated Parmesan cheese
- Dash of pepper (optional)
- Grated or shredded cheddar cheese (optional)
Preparation:
- Microwave potatoes until entire potato is tender throughout
- Cut each potato in half lengthwise
- Scoop out each potato half as close to the skin as possible, and place in a bowl. Set the skins aside
- Add margarine, sour cream, milk, parsley, and Parmesan cheese to the potato in the mixing bowl
- Blend together until the mixture is creamy
- Add pepper if desired
- Spoon potato mixture into the skins
- Sprinkle cheddar cheese on top of each potato if desired
- Broil potatoes until tops are lightly browned
