Sour Cream Potatoes

These potatoes are good with any meal, and with the low-fat and fat-free ingredients (e.g. sour cream, milk, and margarine), you won't have to worry about heartburn.

Ingredients:
  • 2 medium russet potatoes
  • 1tbsp low-fat margarine
  • 2 tbsp fat-free or low-fat sour cream
  • 2 tbsp skim milk
  • 1 tbsp fresh parsley, finely chopped
  • 4 tbsp grated Parmesan cheese
  • Dash of pepper (optional)
  • Grated or shredded cheddar cheese (optional)
Preparation:
  • Microwave potatoes until entire potato is tender throughout
  • Cut each potato in half lengthwise
  • Scoop out each potato half as close to the skin as possible, and place in a bowl. Set the skins aside
  • Add margarine, sour cream, milk, parsley, and Parmesan cheese to the potato in the mixing bowl
  • Blend together until the mixture is creamy
  • Add pepper if desired
  • Spoon potato mixture into the skins
  • Sprinkle cheddar cheese on top of each potato if desired
  • Broil potatoes until tops are lightly browned
