Chicken is a safe choice for most heartburn sufferers, but it can soon become a boring meal without some variety. Curried chicken gives you some variety! Many people who suffer from heartburn can use curry powder in their recipes without triggering their heartburn. If you find you can't tolerate as much curry powder as this recipe calls for, try using less.

Ingredients:
- 2 ¼ cups water
- 1 cup sliced carrots
- 1 tsp curry powder (as tolerated)
- Dash of salt
- 1 cup rice (prepare according to package directions, without added fat or salt)
- 4 tsp vegetable oil
- Nonstick vegetable spray
- 4 boneless, skinless chicken breasts, cut into 1 inch cubes
- 1 cup peas
Preparation:
- Add water, carrots, curry powder, and salt to a saucepan
- Bring to a boil over a medium heat
- Stir in rice
- Cover and simmer on low heat for 25 to 30 minutes, or until the rice is done
- While rice is cooking, spray a skillet with nonstick vegetable spray and place over a medium heat
- Add vegetable oil
- When the skillet is hot, add chicken breast cubes
- Cook 5 to 7 minutes, or until chicken is done
- Add chicken to rice mixture
- Add peas
- Cover and simmer until peas are heated and tender
- Serve
