Baked Chicken and Rice

Chicken breast is a great low-fat choice for those whose heartburn is triggered by fatty foods. The other low-fat ingredients in this recipe helps make this a heartburn free main dish.

Total Time: 50 minutes

Ingredients:

  • Nonstick vegetable cooking spray
  • 1 (10 3/4 oz) can low-fat cream of celery condensed soup
  • 2 cup diced cooked chicken breast
  • 1/4 cup Parmesan cheese
  • 1 cup skim or low-fat milk
  • 1/2 cup low-fat shredded cheddar cheese, divided
  • 1 cup long-grain white rice, cooked according to package directions, without added salt or fat

Preparation:

  • Preheat oven to 350 degrees F
  • In a bowl, mix celery soup, diced chicken, Parmesan cheese, milk, and one half of the shredded cheddar cheese
  • Add cooked rice and mix well
  • Spray a casserole dish with vegetable spray and add rice mixture
  • Top with remaining shredded cheese
  • Bake uncovered for 35 to 40 minutes.
