Ingredients:
- Nonstick vegetable cooking spray
- 1 (10 3/4 oz) can low-fat cream of celery condensed soup
- 2 cup diced cooked chicken breast
- 1/4 cup Parmesan cheese
- 1 cup skim or low-fat milk
- 1/2 cup low-fat shredded cheddar cheese, divided
- 1 cup long-grain white rice, cooked according to package directions, without added salt or fat
Preparation:
- Preheat oven to 350 degrees F
- In a bowl, mix celery soup, diced chicken, Parmesan cheese, milk, and one half of the shredded cheddar cheese
- Add cooked rice and mix well
- Spray a casserole dish with vegetable spray and add rice mixture
- Top with remaining shredded cheese
- Bake uncovered for 35 to 40 minutes.
