Skillet Zucchini with Pasta Shells

Heartburn-friendly vegetarian recipe.

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients:

  • Nonstick vegetable cooking spray
  • 1 tbsp olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup shredded carrots
  • 5 cups thinly sliced zucchini
  • 2 tbsp water
  • 1 (13 3/4 oz) can water-packed artichoke hearts, sliced
  • 1 cup low-fat sour cream
  • 1 tsp basil
  • 1/2 tsp salt
  • 1/2 cup (2 oz) feta cheese
  • 2 tbsp Parmesan cheese
  • 8 oz medium-size pasta shells

Preparation:

  • Cook pasta shells according to directions, without salt or fat

  • Place a large skillet that has been sprayed with nonstick vegetable cooking spray over medium-high heat, then add olive oil

  • Cook 1 minute

  • Add sliced mushrooms

  • Cook 2 minutes

  • Add shredded carrots and sliced zucchini

  • Add 2 tbsp water and cover

  • Cook 3 to 4 minutes or until zucchini is just tender

  • Add artichoke hearts, low-fat sour cream, basil, salt and cooked pasta shells

  • Stir well while heating through

  • Top with feta and Parmesan cheeses
Makes 4 servings.
