Heartburn-friendly vegetarian recipe.

Ingredients:
- Nonstick vegetable cooking spray
- 1 tbsp olive oil
- 1 cup sliced mushrooms
- 1/2 cup shredded carrots
- 5 cups thinly sliced zucchini
- 2 tbsp water
- 1 (13 3/4 oz) can water-packed artichoke hearts, sliced
- 1 cup low-fat sour cream
- 1 tsp basil
- 1/2 tsp salt
- 1/2 cup (2 oz) feta cheese
- 2 tbsp Parmesan cheese
- 8 oz medium-size pasta shells
Preparation:
- Cook pasta shells according to directions, without salt or fat
- Place a large skillet that has been sprayed with nonstick vegetable cooking spray over medium-high heat, then add olive oil
- Cook 1 minute
- Add sliced mushrooms
- Cook 2 minutes
- Add shredded carrots and sliced zucchini
- Add 2 tbsp water and cover
- Cook 3 to 4 minutes or until zucchini is just tender
- Add artichoke hearts, low-fat sour cream, basil, salt and cooked pasta shells
- Stir well while heating through
- Top with feta and Parmesan cheeses
