Parmesan-Mushroom Penne with Herb Sauce

Heartburn-friendly vegetarian recipe.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • Nonstick vegetable cooking spray
  • 1 tsp olive oil
  • 4 cups sliced mushrooms
  • 1 tbsp white cooking wine
  • 1 1/2 tbsp cornstarch
  • 1 1/2 cups 1% milk
  • 1 tsp salt
  • 1 tbsp basil
  • 1/2 tsp tarragon
  • 6 tbsp Parmesan cheese
  • 1/2 (15 oz) can garbanzo beans, drained
  • 8 oz penne pasta

Preparation:

  • Cook penne pasta according to package directions without salt or fat
  • Over a medium-high heat, in a large skillet sprayed with nonstick vegetable cooking spray, add olive oil
  • Cook 1 minute
  • Add sliced mushrooms
  • Cook 3 to 4 minutes until mushrooms are tender
  • Add white cooking wine and stir
  • In a bowl, mix cornstarch into the milk and then add to the skillet
  • Add salt, basil, tarragon, Parmesan cheese and garbanzo beans.
  • Cook mixture, stirring occasionally, 2 to 3 minutes until it thickens
  • Add cooked penne pasta and heat through
