Heartburn-friendly vegetarian recipe.

Ingredients:
- 1 1/2 cups long-grain white rice, cooked according to directions without salt or fat
- Nonstick vegetable cooking spray
- 1 tbsp vegetable oil
- 1 tsp grated fresh ginger
- 1 cup sliced mushrooms
- 1/2 cup egg substitute
- 3/4 cup frozen petite green peas
- 1/2 cup thinly sliced carrots
- 2 cups snow peas, diagonally sliced
- 1 tbsp water
- 2 oz (1/2 cup) cashew nuts (reduce or omit if sensitive to cashews)
- 3 tbsp soy sauce
Preparation:
- Cook rice and set aside
- Take a large skillet, spray with nonstick cooking spray and place over medium-high heat
- Add vegetable oil
- Add ginger and mushrooms
- Stir-fry 2 to 3 minutes
- Add egg substitute in the center of the skillet
- Stir egg substitute until cooked
- Add petite green peas, carrots and snow peas
- Add 1 tbsp water, cover, and cook vegetables 3 to 4 minutes or until just tender
- Add cashew nuts (as tolerated), cooked rice, and soy sauce
- Stir to mix well and heat through
