Cashew Vegetable Fried Rice

Heartburn-friendly vegetarian recipe.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 1/2 cups long-grain white rice, cooked according to directions without salt or fat
  • Nonstick vegetable cooking spray
  • 1 tbsp vegetable oil
  • 1 tsp grated fresh ginger
  • 1 cup sliced mushrooms
  • 1/2 cup egg substitute
  • 3/4 cup frozen petite green peas
  • 1/2 cup thinly sliced carrots
  • 2 cups snow peas, diagonally sliced
  • 1 tbsp water
  • 2 oz (1/2 cup) cashew nuts (reduce or omit if sensitive to cashews)
  • 3 tbsp soy sauce

Preparation:

  • Cook rice and set aside
  • Take a large skillet, spray with nonstick cooking spray and place over medium-high heat
  • Add vegetable oil
  • Add ginger and mushrooms
  • Stir-fry 2 to 3 minutes
  • Add egg substitute in the center of the skillet
  • Stir egg substitute until cooked
  • Add petite green peas, carrots and snow peas
  • Add 1 tbsp water, cover, and cook vegetables 3 to 4 minutes or until just tender
  • Add cashew nuts (as tolerated), cooked rice, and soy sauce
  • Stir to mix well and heat through
Makes 4 servings.
