Bean and Cheese Burritos with Avocado

Heartburn-friendly vegetarian recipe.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 cups nonfat refried pinto beans
  • Nonstick vegetable cooking spray
  • 8 fat-free, 7" to 8" flour tortillas
  • 1 cup (4 oz) grated medium cheddar cheese
  • 1 avocado, sliced thin
  • 4 tbsp low-fat sour cream
  • 2 cups chopped lettuce

Preparation:

  • Warm nonfat refried beans in a small saucepan or in a microwave oven
  • Place one tortilla in a large skillet sprayed with nonstick vegetable cooking spray. Place over a medium heat
  • Add 1/4 cup of refried beans and 2 tbsp (1/2 oz) cheddar cheese to the center of the tortilla
  • Heat through
  • Add 1/8 sliced avocado, 1/2 tbsp low-fat sour cream, and chopped lettuce
  • Repeat with all 8 tortillas
Makes 4 servings.
