Heartburn-friendly vegetarian recipe.

Cook Time: 20 minutes
Ingredients:
- 2 cups nonfat refried pinto beans
- Nonstick vegetable cooking spray
- 8 fat-free, 7" to 8" flour tortillas
- 1 cup (4 oz) grated medium cheddar cheese
- 1 avocado, sliced thin
- 4 tbsp low-fat sour cream
- 2 cups chopped lettuce
Preparation:
- Warm nonfat refried beans in a small saucepan or in a microwave oven
- Place one tortilla in a large skillet sprayed with nonstick vegetable cooking spray. Place over a medium heat
- Add 1/4 cup of refried beans and 2 tbsp (1/2 oz) cheddar cheese to the center of the tortilla
- Heat through
- Add 1/8 sliced avocado, 1/2 tbsp low-fat sour cream, and chopped lettuce
- Repeat with all 8 tortillas
