Chicken and Vegetable Pasta Salad

An old time favorite, chicken and pasta salad, can still be enjoyed if you are a heartburn sufferer. Using low-fat and fat-free ingredients, it will not trigger heartburn in those who can't eat fatty foods.

Total Time: 20 minutes

Ingredients:

  • 8 oz whole wheat rotini pasta, cooked according to directions without added salt or fat
  • 1 cup thinly sliced carrots
  • 1 cup sliced zucchini
  • 2 cup chicken breast, cooked, diced
  • 1/2 chopped cucumber
  • 1/2 chopped celery
  • 1/2 cup low-fat or fat-free salad dressing
  • 1 tsp Italian seasoning (without pepper)
  • 1/2 cup crumbled feta cheese
  • 12 romaine lettuce leaves

Preparation:

  • Rinse cooked rotini pasta in cold water and set aside
  • Steam the carrots and zucchini until just tender
  • Rinse in carrots and zucchini in cold water, drain well and set aside
  • In a bowl combine cooked diced chicken, chopped cucumber, chopped celery, salad dressing, Italian seasoning, and feta cheese
  • Add cooked rotini pasta and cooked vegetables
  • Mix well to evenly coat salad ingredients
  • Place 3 romaine leaves on each of 4 plates, and and top with chicken pasta salad
