Ingredients:
- Non-stick vegetable cooking spray
- 4 Tsp sesame seeds
- 4 Tsp vegetable oil
- 4 3-oz lean pork cutlets, cut into 1/2 inch thick strips
- 2 Tsp toasted sesame oil
- 1/4 cup sliced celery
- 1/4 cup water
- 2 Tbsp reduced-sodium soy sauce
- 1 1/4 cups long-grain brown rice, cooked according to package directions, without salt or fat
Preparation:
- Spray a small skillet with non-stick vegetable cooking spray, place over a medium-high heat, and add sesame seeds
- Stir seeds, heating for 2 to 3 minutes, or until lightly toasted
- Remove skillet from heat and set aside
- Spray another skillet with non-stick vegetable cooking spray, place over a medium-high heat, and add vegetable oil
- When the oil is hot, add pork strips and cook 5 to 7 minutes, or until meat is cooked through
- Remove strips from skillet and set aside
- Add sesame oil to the skillet, and cook for 2 to 3 minutes
- Add soy sauce and cooked pork strips to the skillet and mix well
- Toss together with hot cooked brown rice and toasted sesame seeds
