Turkey Meatballs and Spaghetti

I love spaghetti and meatballs, but sometimes ground beef will trigger my heartburn. With this low fat version of a classic spaghetti and meatball dish, extra lean ground turkey is substituted for the beef or pork. Fatty meats can sometimes trigger heartburn for some individuals.

Total Time: 50 minutes

Ingredients:

  • 1 pound very lean ground turkey
  • 1 slice white or wholewheat bread, crumbled into crumbs
  • ¼ cup skim milk
  • 1 egg
  • ¼ cup parmesan cheese
  • ½ tsp dried oregano
  • Dash of pepper
  • 2 tsp olive oil
  • 8 ounces spaghetti (cooked according to package directions, without added fat)

Preparation:

  • In a bowl, combine ground turkey, bread crumbs, milk, egg white, cheese, oregano and pepper. Blend together thoroughly
  • Shape meat mixture into 12 evenly sized meatballs
  • In a large nonstick skillet, heat olive oil.
  • Add meatballs, and cook over a medium heat approximately 5-7 minutes, or until meat is no longer pink
  • Cover and simmer for 15 minutes
  • Uncover and simmer for an additional 6 minutes.
