Ingredients:
- 2 tbsp margarine or butter
- ½ lb fresh sliced mushrooms
- 6 tbsp flour
- 2 ½ cup turkey or chicken broth
- 1 cup skim milk
- ¼ cup apple juice (or extra broth, if you prefer)
- 2 tsp dry parsley
- 1 tsp salt
- ½ tsp nutmeg
- Pinch paprika
- 8 oz. spaghetti (cooked according to package instructions, without added salt or fat)
- 4 cups chopped cooked turkey
- ¼ cup grated parmesan cheese
Preparation:
- Preheat oven to 350 degrees
- Over a medium heat, warm 2 tsp margarine in a frying pan
- Add mushrooms, and saute for 5 minutes
- Melt remaining margarine in a medium saucepan
- Blend flour in to margarine until it reaches a smooth consistency
- Add broth and milk to the flour mixture, stirring briskly to remove any lumps
- Bring the mixture to a boil
- Add apple juice or extra broth, parsley, salt, nutmeg and paprika
- Continue cooking, stirring occasionally, for 2 to 3 minutes, until thickened
- Cook spaghetti, and drain
- Pour enough sauce in to a lightly greased 3 quart casserole dish to coat the bottom
- Layer mushrooms, spaghetti and turkey over sauce
- Pour remainder of sauce over turkey
- Sprinkle parmesan cheese over the top
- Bake at 350 degrees for 30 minutes to 40 minutes, or until the mixture bubbles
