If you are looking for a delicious way to use your leftover turkey, then this recipe is for you. Using low-fat ingredients and omitting the spices, makes this recipe a healthy and heartburn-safe alternative to the traditional recipe.

Total Time: 1 hour, 5 minutes

Ingredients:

  • 2 tbsp margarine or butter
  • ½ lb fresh sliced mushrooms
  • 6 tbsp flour
  • 2 ½ cup turkey or chicken broth
  • 1 cup skim milk
  • ¼ cup apple juice (or extra broth, if you prefer)
  • 2 tsp dry parsley
  • 1 tsp salt
  • ½ tsp nutmeg
  • Pinch paprika
  • 8 oz. spaghetti (cooked according to package instructions, without added salt or fat)
  • 4 cups chopped cooked turkey
  • ¼ cup grated parmesan cheese

Preparation:

  • Preheat oven to 350 degrees
  • Over a medium heat, warm 2 tsp margarine in a frying pan
  • Add mushrooms, and saute for 5 minutes
  • Melt remaining margarine in a medium saucepan
  • Blend flour in to margarine until it reaches a smooth consistency
  • Add broth and milk to the flour mixture, stirring briskly to remove any lumps
  • Bring the mixture to a boil
  • Add apple juice or extra broth, parsley, salt, nutmeg and paprika
  • Continue cooking, stirring occasionally, for 2 to 3 minutes, until thickened
  • Cook spaghetti, and drain
  • Pour enough sauce in to a lightly greased 3 quart casserole dish to coat the bottom
  • Layer mushrooms, spaghetti and turkey over sauce
  • Pour remainder of sauce over turkey
  • Sprinkle parmesan cheese over the top
  • Bake at 350 degrees for 30 minutes to 40 minutes, or until the mixture bubbles
