Ingredients:
- 1 tbsp vegetable oil
- 1/2 cup thinly sliced carrots
- 1 pound pork tenderloin, cut into 1-inch cubes
- 2 tsp flour
- 1 tbsp dried basil
- 1 tbsp dried parsley
- ½ tsp pepper
- ½ tsp beef bouillon granules
- ¾ cup low-fat cream
- ¼ cup beef broth
Preparation:
- In a skillet placed over medium heat, cook carrots in oil for 5 minutes, stirring frequently
- Add pork, and cook until meat is lightly browned
- Remove only the pork from the skillet, and set aside, covered to keep it warm
- In the same skillet, stir together flour, basil, parsley, pepper and beef granules
- Blend in low-fat cream, stirring until the mixture is thick
- Stir in beef broth
- Return pork to the skillet, reduce heat to low, cover and simmer for 20 minutes, stirring occasionally
- Serve hot
