Pork tenderloin is a very lean cut of meat. Since fatty foods can be a heartburn trigger for some individuals, using pork tenderloin along with low-fat cheese and pasta creates a low-fat, heartburn-friendly meal.

Ingredients:
- 8 oz noodles (cooked according to package instructions, without added salt or fat)
- 2 tbsp low-fat margarine
- 1 pound pork tenderloin, cut into 1-inch cubes
- 4 tbsp low-fat margarine
- ½ pound sliced fresh mushrooms
- 2 cups chicken broth
- 1 cup low-fat cheese, crumbled
- ½ tsp salt
- ¾ cup water
- 2 tbsp cornstarch
Preparation:
- In a skillet over medium heat, melt 2 tablespoons of butter
- Add the pork tenderloin, and cook until meat is no longer pink inside
- Remove the pork from the skillet and set aside, covered to keep it warm
- Using the same skillet, melt 4 tablespoons of butter over a medium-high heat
- Stir in mushrooms and cook until mushrooms are tender
- Add chicken broth and salt, and bring to a simmer
- When the broth is hot, stir the blue cheese and salt until the cheese has melted
- Mix together the water and cornstarch, blending well so there are no lumps
- Add the cornstarch mixture slowly to the simmering broth, stirring constantly
- Cook for 1 minute, stirring constantly, or until the broth mixture is thick and clear
- Serve pork over cooked noodles, and pour broth mixture over the top of both
