Baked Halibut

Seafood can make a great heartburn-friendly meal for those individuals whose heartburn is triggered by fatty foods. You can have a delicious dish without the added fat of frying your seafood This halibut dish is also good for heartburn sufferers because it contains heartburn-friendly ingredients, such as fat-free sour cream.

Total Time: 40 minutes

Ingredients:

  • 4, 6 oz halibut fillets
  • Dash of salt
  • Nonstick vegetable cooking spray
  • 1 cup shredded carrot
  • 2 Tbsp fresh minced parsley
  • 4 tsp olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup fat-free or low-fat sour cream
  • 1 cup long-grain brown rice (cooked according to package directions without salt or fat)

Preparation:

  • Preheat oven to 350 degrees F
  • Spray a baking dish with nonstick vegetable spray, then place halibut fillets in the baking dish
  • Sprinkle fillets evenly with salt and then set aside
  • Combine shredded carrots and parsley in a bowl, and mix well
  • Sprinkle carrot mixture on top of halibut fillets
  • Cover and bake for 30 minutes
  • As the fillets are baking, add olive oil and mushrooms to a skillet that has been sprayed with nonstick vegetable spray, and cook over a medium-high heat for 2 to 3 minutes
  • Add sour cream
  • Stir to heat mushroom mixture through
  • Serve over the baked halibut, with hot brown rice
