Ingredients:
- 1/4 medium avocado
- 1/4 cup(s) egg substitute
- 2 tablespoon milk, skim or lowfat
- 1 teaspoon cilantro, fresh, chopped
- 1 tablespoon low-fat cheddar cheese, shredded
Preparation:
- Peel and slice avocado, then set aside
- Combine egg substitute, milk, and cilantro in a bowl. Place in microwave and heat on high until the mixture holds together, stirring every 30 seconds
- Transfer egg mixture to a serving plate, and top with cheese and avocado slices
