Huevos a la Mexicana (Mexican eggs) make for a delightful breakfast. The ingredients are also heartburn friendly.

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients:

  • 1/4 medium avocado
  • 1/4 cup(s) egg substitute
  • 2 tablespoon milk, skim or lowfat
  • 1 teaspoon cilantro, fresh, chopped
  • 1 tablespoon low-fat cheddar cheese, shredded

Preparation:

  • Peel and slice avocado, then set aside
  • Combine egg substitute, milk, and cilantro in a bowl. Place in microwave and heat on high until the mixture holds together, stirring every 30 seconds
  • Transfer egg mixture to a serving plate, and top with cheese and avocado slices
