Ingredients:
- Nonstick vegetable cooking spray
- 2 Tsp vegetable oil
- 4 4-oz portions lean beef sirloin tips, 1 inch thick
- 2 cups sliced mushrooms
- 2 cups fresh green beans, cut into 1 inch pieces
- 2 cups baby carrots
- 3/4 cup low-fat sour cream
- Dash of salt
- 1 cup long-grain brown rice, cooked according to package directions, without added salt or fat
Preparation:
- In a skillet that has been sprayed with non-stick vegetable cooking spray, add vegetable oil and mushrooms.
- Sauté for 2 to 3 minutes
- Remove mushrooms from skillet and set aside
- Add sirloin tips to the skillet, and cook 6 to 8 minutes on each side, or until desired doneness
- While the sirloin tips are cooking, take a medium saucepan and steam the fresh green beans and baby carrots until tender
- Set vegetables aside
- Remove sirloin tips from the skillet when done and place the sautéed mushroom mixture in the skillet
- Add the steamed green beans and baby carrots to the mushrooms, and add the sour cream and salt
- Stir the mushrooms and vegetable mixture until it is heated through
- Serve the beef sirloin tips with the vegetable and mushroom mixture and the hot cooked brown rice.
