Sirloin Tips with Vegetables and Rice

The combination of lean beef, low-fat ingredients, and fresh vegetables make this a tasty meal that is also heartburn friendly.

Ingredients:

  • Nonstick vegetable cooking spray
  • 2 Tsp vegetable oil
  • 4 4-oz portions lean beef sirloin tips, 1 inch thick
  • 2 cups sliced mushrooms
  • 2 cups fresh green beans, cut into 1 inch pieces
  • 2 cups baby carrots
  • 3/4 cup low-fat sour cream
  • Dash of salt
  • 1 cup long-grain brown rice, cooked according to package directions, without added salt or fat

Preparation:

  • In a skillet that has been sprayed with non-stick vegetable cooking spray, add vegetable oil and mushrooms.
  • Sauté for 2 to 3 minutes
  • Remove mushrooms from skillet and set aside
  • Add sirloin tips to the skillet, and cook 6 to 8 minutes on each side, or until desired doneness
  • While the sirloin tips are cooking, take a medium saucepan and steam the fresh green beans and baby carrots until tender
  • Set vegetables aside
  • Remove sirloin tips from the skillet when done and place the sautéed mushroom mixture in the skillet
  • Add the steamed green beans and baby carrots to the mushrooms, and add the sour cream and salt
  • Stir the mushrooms and vegetable mixture until it is heated through
  • Serve the beef sirloin tips with the vegetable and mushroom mixture and the hot cooked brown rice.
